Mother of the Year Award...

Goes to me, for keeping a brave face despite humiliation at the local pool. Sweet Faith is getting more vocal by the day, and I'm amazed by how quickly her vocabulary is growing. She will be a great conversationalist, just like her Pop-Pop, in no time, I'm sure.

Imagine my horror at the pool yesterday... After an afternoon of fun in the sun, Faith is happily eating "Karen's Easy Pasta Salad" (recipe follows) when she decides to give her fork to a friend. Immediately deciding she wants her fork back (and the one-year old was not cooperating), Faith begins demanding, "I wanna fork! I wanna fork! I wanna fork!

There is only one wee problem. Faith can't pronounce the letter "R". My friends laughed while other mothers looked on, horrified. So, with great humility, I present a video for you to witness Faith's new word.




Karen's Pasta Salad... Great for a day at the pool

1 lb Rotini pasta, cooked according to package directions
12 ounces cubed chicken breast (I love Oscar Myer's Ready Cooked Chicken)
1 6 oz can black olives
1 16 oz jar marinated baby corn, cut into bite-sized pieces
1 can black beans, rinsed
1 can Cannellini beans, rinsed
cooked green beans, cut up into bite size pieces
8 ounces cubed cheese
1 package grape tomatoes, cut in half
Vinaigrette of your choice
-Mix all ingredients together with enough vinaigrette to coat. (I love Newman's Own Light Balsamic Dressing.) Chill and bring to your next pool party. It's even better the next day! Yes, I'm bragging! Makes a TON.
