For the Love of Spam!


Yes, I've had some cravings which some might call strange. The past few days, I've been dreaming of Spam Ceviche, which my friend's mom first introduced me to a few months ago. I guess it is a Guamanian recipe. I love it! I finally broke down and made it for dinner tonight. Jason and Faith actually liked it too, which means I have no leftovers!
Spam Ceviche
1/4 c fresh lemon juice
1/4 c chopped green onion
1 c grape tomatoes, halved
1 can Spam, diced
Mix everything and let it sit for a few minutes. Serve over hot rice. Yum!
Okay, so I AM crazy in love with EVERYTHING sour lately. Sinigang, Palabok with extra lemon, Chicken Picatta, lemonade, limeade, dill pickles... I don't know what is going on!

Eewww... SPAM? I don't know if I can get over my prejudices against it to try it in a recipe?!

Sour stuff sounds good, though! Have a little grapefruit for your growing little grapefruit! :)
